Bulgar, Harissa,Tomato & Chickpea Salad

Bulgar is commonly know for it’s place in “Tabbouleh”, a well known recipe with parsley as the main ingredient, lemon, tomatoes, cucumber and mint.  Bulgar is incredibly versatile, easy to cook with and works well with endless combinations of herbs, spices and flavours. This is ready in 10 minutes and is perfect for adding to the summer barbeque spread, for batch cooking or as a filler in salads.

Ingredients

  • 200g Bulgar Wheat

  • 100g Chickpeas

  • 250g Cherry Tomatoes (sliced in half)

  • 3 Spring Onions, sliced thinly

  • 3 Sprigs of Fresh Parsley Leaves (chopped finely)

  • 2 Stems of Fresh Mint Leaves (chopped finely)

  • 1 Stem of Coriander Leaves (chopped finely)

  • 1 Tsp Bouillon/Veg Stock

  • 1 Tsp Honey

  • 1/2 Tsp of Harissa Paste

  • Juice of 1 Lemon

Directions

  • Boil 300ml of water in a saucepan and add the bouillon.
  • Rinse the bulgar wheat in a sieve and add to the boiling water.
  • Remove from the heat, cover and leave for 10 minutes. (return to heat to evaporate any excess liquid)
  • Stir the honey, harissa and chopped herbs into the bulgar wheat.
  • Combine with the tomatoes and chickpeas.
