Shawarma Spiced Cauliflower & Yoghurt Wrap

Shawarma is a dish originating in the middle east and is typically made up of thinly sliced roasted meat, marinated in spices and served on warm pita or flatbreads.  We’re replacing the main component here with roasted cauliflower because, well, roasted vegetables are better, aren’t they?! The spice mix in this recipe is combined with honey and roasted with the cauliflower until gorgeously caramelised and ready to serve on a warm wrap with a dollop of yoghurt and some zingy pickled red onions.

Ingredients

  • 1 Medium Sized Cauliflower, broken into small florets (approx 900 g)

  • For the Cauliflower Spice Marinade
  • 1 Tbsp Cumin

  • 1 Tbsp Ginger Powder

  • 1 Tbsp Sweet Paprika

  • 1 Tbsp Sumac

  • 1 Tbsp All Spice

  • 1 Tsp Nutmeg

  • 1/2 Tsp Cinnamon

  • 2 Garlic Cloves (crushed)

  • 2 Tbsp Honey

  • 1 Tsp Salt

  • Chilli Flakes (optional)

  • 6 Tbsp Sunflower Oil (or other oil)

  • To Serve
  • 2 Heated Flatbreads/Wraps

  • 2 Scallions (sliced thinly)

  • Natural Yoghurt

  • Picked Red Onions

  • Fresh Coriander Leaves

Directions

  • Preheat the oven to 180°c/350°f (fan)
  • Add the spices, honey, garlic and oil to a jar and shake until combined.
  • Chop washed cauliflower in half, break it up with your hands into small pieces over a roasting tin and season well.
  • Pour the spice mix over the cauliflower and use your hands to make sure it’s properly combined.
  • Roast for 40 minutes or until you can see a good caramelisation going on.
  • Warm the breads, top with cauliflower, picked onions, coriander, scallions and yoghurt.

Notes

  • A full cauliflower once roasted only stretches to serve two people (death by cauliflower?) as a properly packed wrap so don’t be afraid to throw some more veg such as cubed butternut squash in with the cauliflower to make it go a bit further.  You could also add chickpeas to the roasting tin if you want to get a bit of crunch in there too! If you need to double or even triple up on the spice mix, you can always do this and just use it as needed, depending on what you want this to be.
