Bulgar is commonly know for it’s place in “Tabbouleh”, a well known recipe with parsley as the main ingredient, lemon, tomatoes, cucumber and mint. Bulgar is incredibly versatile, easy to cook with and works well with endless combinations of herbs, spices and flavours. This is ready in 10 minutes and is perfect for adding to the summer barbeque spread or even for batch cooking and using as a filler in salads.

Harissa Bulgar, Tomato & Chickpea Salad

Ingredients

Instructions

  1. Boil 300ml of water in a saucepan and add the bouillon.
  2. Rinse the bulgar wheat in a sieve and add to the boiling water.
  3. Remove from the heat, cover and leave for 10 minutes. (return to heat for a few seconds if some liquid remains)
  4. Stir the honey, harissa and chopped herbs into the bulgar wheat.
  5. Combine with the tomatoes and chickpeas.
