Harissa Bulgar, Tomato & Chickpea Salad

Ingredients
  • 200 g Bulgar Wheat
  • 250 g Cherry Tomatoes
  • 100 g Chickpeas
  • 2 stick Spring Onions (Sliced thinly)
  • 1 tsp Harissa Paste
  • 1 tsp Honey
  • 1 tsp Bouillon
  • 3 tbsp Fresh Parsley (chopped)
  • 1 tbsp Fresh Mint (chopped)
  • 1 tbsp Fresh Coriander (chopped)
  • 1/2 Juice of Lemon
Instructions
  1. Boil 300ml of water in a saucepan and add the bouillon.
  2. Rinse the bulgar wheat in a sieve and add to the boiling water.
  3. Remove from the heat, cover and leave for 10 minutes. (return to heat for a few seconds if some liquid remains)
  4. Stir the honey, harissa and chopped herbs into the bulgar wheat.
  5. Combine with the tomatoes and chickpeas.
